Meal Planning Monday

We’re over the illnesses and onto the catch-up (the laundry, the errands, the blogging). Let’s start another week off right:

MondayCrockpot Baked Ziti, green beans
Tuesday–Chicken Fajitas, Spanish rice
Wednesday–Spinach Pie (recipe is here, scroll down a bit),
Thursday–We’re going to a picnic potluck (1 of 2 this week), so we’ll have a big meal around 3-4 and then have a light snack around dinnertime.
Friday–Homemade Chicken Fingers, Cauliflower Mashed Potatoes (from Deceptively Delicious), Broccoli
Saturday–Another picnic, another potluck. I’m bringing my yummy pasta salad.

    Thanks for the crockpot link, Gina! (But FYI, the link is broken, there’s an extra http and slashes in there.) I just added the blog to my Google Reader, I LOVE LOVE LOVE my crockpot and need new recipes for it.

    Have you made the ziti before? It sounded like it needs a fair amount of tweaking, although my husband might actually be into the crunchy part … so maybe I’ll just try it anyway. Thanks again!

  2. Whenever I make lasagna in the crockpot, I just make sure there’s no noodles touching the sides and that all the noodles are coated with sauce (for moisture). That’s what I was planning to do.

    Plus, if you use non-wheat noodles, they’ll be more tender and not take as long to cook. I’ve switched to the Barilla Plus because they’re more like “white” noodles but with the added nutrients/fiber of wheat.

  5. I love your pasta salad recipe! With the July 4th celebration coming up and all the picnics, BBQ’s, etc., I will lots of opportunity to use it.
