Meal Planning Monday–Breakfast for Dinner

Breakfast for dinner. We all do it (don’t we?). I must admit, I usually do it as a last-minute, I don’t feel like cooking anything, let alone what’s on the meal plan, just whip up some scrambled eggs and toast dinner thing. But this time I planned ahead. I wanted a savory omelet with delicious potatoes. And it came out great:

I made a regular omelet (I do it in a giant pan so I can split it up between my husband, 4yo and me–the twins get regular scrambled eggs). Inside, I used some torn fresh spinach and Feta cheese. It was really good. For the potatoes, I diced them and sauteed them in olive oil and LOTS of rosemary. Served it with sliced tomatoes, and it was a filling, delicious, and relatively inexpensive meal (eggs are a lot cheaper than meat!).

Monday–Spinach & Feta Omelet, Rosemary Potatoes, sliced tomatoes
Tuesday–Stroganoff-Style Chicken (we never had this last week because we ended up eating with our neighbors that night, so I still have all the ingredients handy.
Wednesday–Hamburgers (from Cook Once, Eat 10 Times), Buns, Broccoli Slaw, frozen corn
Thursday–Chicken & Broccoli Stuffing Skillet, salad
Friday–Easy as Boxed Macaroni & Cheese (from The Moms’ Guide to Meal Makeovers), frozen peas
Saturday–Spaghetti and Meatballs (from Cook Once, Eat 10 Times), salad
