Meal Planning Monday: Family Favorites


Last week’s food was easy, but good. I’m no food photographer, but here’s the Spinach Pie we had (I put it on an inverted bowl to help it cool). It’s such an easy recipe, you just throw everything in one bowl and mix, then pour it into a pie crust or sprayed pie plate to cook.

This week, Menu Planning Monday is asking for Family Favorites, those recipes that are tried and true to work with your family. I use a lot of those recipes each week, but one of our new favorites is the Crockpot Roast below. Again–easy–that’s key for me. Really, all week are our family favorites, I just keep rotating the same yummy meals around from week to week.

Monday–Veggie Pizza, salad
Tuesday–Sundried Tomato and Feta Tri-tip (I use a round roast), baked potatoes, broccoli
Wednesday–Sauteed Chicken and Veggies (asparagus, mushrooms, olives) over angel hair pasta
Thursday–Chicken, Peppers, and Potatoes, frozen peas
Friday–Spaghetti and Meatballs, salad
Saturday–Turkey Melts, Homemade Fries (see recipe below)

For Turkey Melts: I butter two slices of bread like I’m making a grilled cheese sandwich. Inside, I layer sliced turkey, provolone cheese, and roasted red peppers. I heat them till the cheese is melted. Yum!

Homemade Fries: I cut potatoes into wedges and toss them in a bowl with a few tablespoons of olive oil. I lay them out on a cookie sheet and sprinkle them with garlic salt. They roast at 400 degrees for 40 minutes.
