WFMW: Mini-Muffin Tin = Fancy Food


Although I generally would not recommend that a husband buy a wife an appliance or kitchen item for a birthday gift, I specifically asked my husband to get me a mini-muffin tin for Christmas last year. Strange? Perhaps. But I looooove it. It makes tiny little muffins for toddler-sized hands and appetites, and you get more of the yummy tops than you do with a regular-sized muffin. I use it all the time, and it makes me happy. So it was a good gift.

One of my FAVORITE uses is for brownie cups, now requested when I go to potlucks and other group events. They look so fancy and impressive, while costing me less than .75 to make! I pick up brownie mixes when they’re on sale for .50 or less, and I have plenty of frosting that was FREE from a local store’s triple coupon days.

I bake the brownies in the mini-muffin tin (at 325 for 12-14 minutes), press down the centers while still warm out of the oven, and pipe in a little frosting in there (I like whipped vanilla for contrast or milk chocolate for indulgence). And yes, I know I’m not good at taking food photos, but there you have it.

    I have a mini muffin tin and have always wanted to use it for brownies, but i'm afraid of the "toddler distraction factor" since I have no idea how long to cook them for. How long do they usually take?

    I usually cook them at 325 and check them at 12-14 minutes. You don't want to overcook them (TRUST ME), then you can't get them out of the pan without using a knife and practically cutting your fingers off. Or so I've heard…

    you can also stick a reeses pb cup in there – gosh those are yummy…
    my favorite is choc chip cookie dough in the muffin tin and then halfway done, stick the pb cup in. wow.

    I am definitely going to try it. My husband rues the day I bought the mini muffin tins. He says he is a man and wants man sized food.

    sweet! I have the brownie mix and a can of frosting in my pantry. The only problem is I got my mini muffin tins full of wax residue after maxing "rainbow crayons" =(

    do you bake these in a 24-count mini-muffin tin? if so, do you use one brownie mix suitable for a 13×9 pan? thanks!

    When I use a 9×13 brownie mix, it makes more than 24 (depending on how much batter is eaten along the way–ahem).
