Stick a big batch in the freezer, and next time you want mashed potatoes, you can just reheat them in the slow cooker. Plus they’re scrumptious (sour cream makes everything better).

Safeway Boneless Skinless Chicken Breasts or Thighs are $1.69/lb. That’s my target price, so I’ll be stocking up. With 10 pounds of chicken, I can do a Cook Once, Eat 10 Times session and be prepped for a few weeks’ meals.
