I spend most of a snowy afternoon yesterday working in the kitchen. I did a Cook Once, Eat 10 Times session for both ground beef and chicken since I had picked them both up on sale last week. Now the freezer is stocked with meals to make life easier the next few (crazy) weeks. The cold weather has me wanting soup and homemade bread, too, so I’ll be putting those on my meal plan a lot. Sunday–Hamburgers, homemade fries, veggies and dip
Monday–Pineapple Pork Chops, green beans, rice
Tuesday–Spinach Pie, corn muffins
Wednesday–Beef tacos (using the meat I precooked on Sunday), fixings, black beans and rice
Thursday–Leftovers of the week so far
Friday–Meatball soup (I can’t wait! I’ve been craving this and waiting for cold weather), homemade bread
Saturday–Crockpot chicken cacciatore, spaghetti, broccoli

Hi Gina – The holidays (Thanksgiving AND Christmas) wouldn't be the same without homemade pumpkin pie… probably because it's always been that way since I was a child. However, this year, I am starting a new tradition for Christmas breakfast using my best friend's recipes for a yummy egg & sausage casserole and a blueberry french toast casserole. You have to make them the night before — which solves an annual problem for me. I want to serve a special homemade Christmas breakfast, but the last thing I want to do after staying up late wrapping presents, then getting up at the *crack of dawn* with anxious kids, is make a huge breakfast — so it's already done but not the same old, same old. Then I can just enjoy the morning with my family.

I love making eggnog bread. I get requests to make it and then family members toast it and put a pad of butter on it.
My favorite holiday recipe is called Orpha Salad and is a jello salad of sorts that was first made by my great grandma Orpha(or maybe great great grandma – I never met her).

A holiday favorite for us is pretzel salad — jello with cranberry sauce and pineapple layered over a cream cheese/Cool Whip mixture and gelled over a buttery sweet pretzel crust. Delish!

I would love this for my mom who was raised in the south but moved to New England when she met my dad. She's been here now for almost 50 years but still misses the south something terrible.
