I love recipes with only a few ingredients but a LOT of flavor. This Garlic-Thyme Chicken in the slow cooker fits the bill. I had a late start, only turning it on around 2:00pm, but since my chicken was thawed, it was fine. The kids loved the taste, and we all stunk of garlic till the next day, which they also loved.
6 cloves garlic, minced
1 1/2 tsp dried thyme
2 lbs. chicken breasts (or bone-in)
1/4 cup orange juice (that’s the purple container)
1 Tbsp. balsamic vinegar
I sprayed the slow cooker and laid the chicken in the bottom. Then I mixed the other ingredients in a bowl and poured it over the top. Cook on low 4-6 hours, longer if your chicken is frozen to start. If you want the extra step, you can pour the juice out after you remove the chicken and simmer it over low heat, making a glaze to serve alongside the chicken.
