
Hope you had a wonderful Mother’s Day. I woke up, was fed breakfast by my kids, and then went back to sleep until 10:20. It was just what I needed!
I mentioned in last week’s meal plan that I had planned out two weeks of meals because I knew there were a lot of busy days ahead. Good thing–since I certainly didn’t feel like doing a meal plan or a grocery list on my “day off” yesterday. As I mentioned on Facebook, the salmon cakes that we tried last week were a HUGE hit with my kids. They want to know when we’ll have them again! I’m also trying some new recipes from Make it Fast, Cook it Slow*, the recipe book from Stephanie at A Year of Slow Cooking. So far, so good. Here’s the plan for this week:
Monday–Hamburgers, buns, broccoli slaw
Tuesday– Parmesan Tilapia in the slow cooker, rice, green beans
Wednesday--Chicken and Brown Rice Casserole in the slow cooker, salad
Thursday–Spinach Pasta Salad, garlic bread (easy to make in the morning and let sit in the fridge all day)
Friday–Lazy Chicken in the slow cooker, spaghetti, broccoli and cauliflower
Saturday–BBQing with neighbors
