Grocery Savings Day 12: Have a Backup Plan

Today’s strategy is: have a backup plan. I hurt myself over the weekend, which put a dent in my usual tasks that get me ready for the week. Things happen! Save yourself a lot of money and stress by keeping a few “back up meals” on hand, like a frozen pizza or lasagna, canned soup, or an easy pantry meal. I know that there are times when I get sick after taking care of 3 sick kids, and it’s nice to have something easy to throw together to feed everyone instead of spending $30+ on takeout.

Some of my back-up meals are:

  • Garbanzo & Artichoke Quinoa (everything is canned but the Feta), also good on angel hair pasta.
  • Breakfast for dinner–scrambled eggs or omelets, toast and fruit (since we almost always have eggs in the house)
  • Simple Soups–you can make this Tortellini Soup a pantry/freezer meal by stocking frozen spinach, dried or frozen tortellini, and chicken broth. 
  • Broccoli Pie–this is my “go to” meal when I have no other idea what to make. As long as we have eggs & milk, I can make this recipe (sans chicken) or a combination of it with whatever cheese and veggie I have in the freezer. I’ve done broccoli with cheddar and spinach with mozzarella, just winging it. It’s crustless, so I just use a bit of gluten-free flour in place of the Bisquick.
