Some of the recipes in my recipe binder are well used, stained even! This one comes from a 2003 issue of Fitness Magazine, and we ate it all the time before we had kids. I hadn’t tried it in a while, but now that my kids like spinach so much, I figured it was worth a shot (they loved it!). I like this so much better than a plain turkey burger; adding spinach to the ground turkey makes it moister and changes the flavor a lot. With the melted cheese and yummy roasted red peppers, it’s a great alternative to a traditional summer hamburger. I ate mine open-faced on gluten-free bread, the rest of the family used hamburger buns.
Turkey Spinach Burgersrecipe from a very old issue of Fitness Magazine1 lb lean ground turkey breast
1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
1/4 tsp salt
1/8 tsp ground black pepper
1/8 teaspoon ground nutmeg4 whole wheat or gluten-free hamburger buns
1 roasted red pepper, quartered
4 slices mozzarella or provolone cheeseCoat grill with cooking spray and heat grill to medium-high for direct heat. In a large bowl, combine turkey, spinach, salt, pepper and nutmeg. Shape into four 3 1/2 inch patties. Grill or broil 10 minutes, turning once, or until a meat thermometer insterted in the sides of the burger registers 165 F. Top each bun with lettuce; place burgers on top. Garnish with roasted pepper and cheese.
