We had another beautiful fall weekend here in the DC area. Hope you’re enjoying this wonderful season!
With the kids in school, I moved my meal planning/listmaking/shopping day to Friday, and it’s been working out great. I plan for the week ahead–dinners, lunches and snacks–and then can relax with my family for the weekend.
Here’s my lunchbox plan for the week:
- Pasta salad made with ham, peas, and shredded cheddar
- Turkey sandwiches
- Egg salad sandwiches
- Homemade “Lunchables”
- Tuna sandwiches
You can tell potatoes have been on sale since they’re all over my meal plans! I’m still using up some FREE ham, too. So here’s the dinner meal plan:
Sunday–We grilled with our neighbors–flank steak, grilled veggies, and sweet potato fries
Meatless Monday–Potato Corn Chowder (skip the bacon on top to go meatless)
Tuesday–Chicken, peppers and potatoes, peas
Wednesday–Turkey spinach burgers, buns (mine is GF), homemade fries, corn
Thursday–Chicken Verde and Spanish Rice from the $5 Dinner Mom Cookbook
Friday–Hashbrown Breakfast Casserole (still using up some ham!)
Saturday–Chicken Sausage and Rice (I’m using brown rice)
