Meal Plan Monday: Back to the Grind

Hope you had a wonderful Thanksgiving weekend! We had a blast with our friends who were visiting from Florida, the kids got along great, and we ate (a lot) well. I’m glad to be getting back to the regular routine, but my cupboards are bare! My pantry is almost empty and my stockpile has been used up. I’m using what little I have left in my November grocery budget to get us through until Thursday (December 1st). I managed to stay on budget even with the holiday, but I’m scraping by since it’s the end of the month.

Here’s my plan to get us through until Thursday. Then I’m gambling and hoping that chicken or something will be on sale with the new grocery store ads:

Sunday–Leftover Turkey & Wild Rice Soup
Meatless Monday–Omelets, hash browns, fruit
Tuesday–Pork chops, leftover mashed potatoes from Thanksgiving (from the freezer), green beans
WednesdayPita Pizzas (I’ll use GF bread as my crust) with veggies on top, salad
Thursday–Super Easy Chicken Soup, corn muffins (GF for me)
