Meal Plan Monday: Slow Cooker Week

I’m actually glad for the cooler weather this week–high 40’s and rainy–so I can cook some yummy soups we haven’t had in a while. I’m relying on my slow cooker a lot this week because we have busy evenings, guests coming in later in the week, and I don’t want to be in the kitchen!

Sunday–Chicken & Spinach Quesadillas (using leftover grilled chicken from the other night), black beans, carrots & celery with dip
Meatless Monday–
Cheddar Corn Potato Chowder, salad
Tuesday–Ginger Chicken in the slow cooker (a simplified version of this), brown rice noodles
Wednesday–I’m eating out w/friends so I’m leaving the family with Ravioli Florentine Lasagna and garlic bread
Thursday–Italian Sloppy Joes (trying out a new recipe), homemade fries, leftover salad
Friday–Slow Cooker Tortilla Soup, cornbread
Saturday–Pesto Chicken Sandwiches, sweet potato fries, salad

  1. I’m trying out a two week plan because of company. We’ll see how it goes. They have lots of food allergies, so “bars” will be my friend. Everyone can make their own thing.
