We’re in that weird couple of weeks between school and summer. This week will be hectic as the kids have full days of school, then start swim team practice every evening at 5:00. I need meals that I can prep in the morning or stick in the slow cooker for the day, so we can walk in the door and get food on the table. These are simple and well-loved by my family, so they’re perfect for this week:
Sunday–Cilantro Lime Chicken and cold Rainbow Rice Salad (I used quinoa instead of rice)
Monday–BBQing with friends
Tuesday–Lazy Chicken in the slow cooker (just chicken with BBQ sauce), hamburger buns, broccoli slaw, watermelon
Wednesday–Spinach Feta Pasta Salad
Thursday–Crockpot Italian Sloppy Joes, corn on the cob, salad
Friday–Chicken Fajitas, tortillas, brown rice, black beans
Saturday–Pizza night
