We’re getting closer to summer, with swim team registration, temps in the 80′s, and the kids counting down until school gets out (just 19 days now!). I’m thinking ahead to busy summer nights where we have to pack a dinner to take to a swim meet or the pool, coming home to a slow cooked meal while we’re out all day, and more. So this week I’m trying out some recipes that I hope will fit the bill of prepping in the morning (or the night before), and avoiding any cooking or prep during the actual dinner hour.
Sunday–Corn Chex (GF) Chicken Tenders, salad, sweet potato fries
Meatless Monday–Fiesta Rice Salad, made in the morning and left to chill for after Tae Kwon Do
Tuesday–Italian Sub Salad
Wednesday–Mediterranean Chicken in the slow cooker (I use black instead of green olives because my kids prefer them), quinoa
Thursday–Sausage Pesto Pizzas (I’ll use homemade dough instead of pitas), salad
Friday–Slow Cooker Moo Shu Chicken, with tortillas for wraps (lettuce for GF)
Saturday–Grilled chicken, red potato salad, grilled vegetables
