The kids are finally on summer break, and we’re switching to early morning swim practices. I hope that will pacify the “I’m tired!” complaints. Now they’ll probably be cold! We’ve started to get a few veggies from the backyard garden, so it’s been nice to use a home-grown zucchini or cucumber in with our regular summer meals. Their appetites have really revved up from all the daily exercise, so I’m looking for snack ideas to keep everyone happy without breaking the bank. I like to bake muffins, but it’s so hot right now! Any ideas?
Sunday–Chicken Sausage, zucchini and mushrooms on pasta, green beans
Monday–Quesadillas and salad
Tuesday–Lemon Pesto Chicken, pasta, green beans
Wednesday–Pineapple Pork (in the slow cooker instead of the oven), brown rice, green beans
Thursday–Breakfast for dinner–omelets, rosemary potatoes, and fruit
Friday–Slow cooker BBQ Chicken, broccoli slaw, corn on the cob
Saturday–Slow Cooker Taco Pie (using precooked beef from the freezer)
