It’s finally the last week of school! All three kids are between happy and sad about it. I’m just eager to spend some real time with them with a lot less hustle and bustle (or am I naive to think that?). We have a number of plans for the summer–some involving books, relaxing, and hanging out–and some involving day trips, museum visits, and other free activities. My son is getting interested in cooking again, so that’s another thing on his “to do” list. At age 8, he’s comfortable using the slow cooker and is fine using a “real” knife, so we’ll see what new skills he can master this summer.
Sunday–Balsamic Mushroom Pork, baked potatoes, zucchini
Monday–Beef Tacos, corn shells, tomato, lettuce, cheese, and black beans
Tuesday–Chicken Pesto Pasta Salad
Wednesday–Lazy Chicken in the slow cooker (just chicken with salsa verde), brown rice, leftover fixings from last night
Thursday–Italian Spinach Pie (I’ll cook it early in the morning and reheat it later), salad
Friday–Pizza and leftover salad
Saturday–Mango Pork (except I’m going to try it in the slow cooker so I don’t have to turn the oven on), wild rice, green beans
