Meal Plan Monday: Too Hot to Cook

It’s hot. Too hot. Same where you are? It’s hard to cook at all, and I certainly don’t want to use the oven. We’re doing a lot of grilled chicken on top of salad, then using leftover chicken the next day for lunch. We have our first home swim meet Monday night, so I’m just planning to feed everyone there. I’m trying to adapt my monthly grocery budget (currently $450) to reflect this kind of eating out. We pack our own snacks and drinks, so that keeps the cost down.

Sunday–Eating at a birthday party
Monday–Home Swim Meet–we’ll eat there
Tuesday–Grilled Chili Lime Chicken over green salad
Wednesday–Beef Tacos (from the freezer), corn shells, tomatoes, lettuce, cheese, black beans
Thursday–Grilled Sesame Pork Kabobs, green salad
Friday–Chicken Fajitas DCB, tortillas, brown rice, black beans
Saturday–Bringing veggies and hummus to a potluck dinner party

Now that I look at it, I guess I’m not cooking that much this week. Cool!
