What to do with loads of Zucchini?


Are you gardening this summer? My neighbor and I have a double-wide three-tiered garden going, and it’s starting to pay off. Last night, we enjoyed these lovely zucchini for dinner. But there’s more to come, and it seems like they all come at once! I sliced these zucchini in half length-wise, brushed them with olive oil and sprinkled a little salt, then grilled them. Delicious!

  1. My zucchini produced flowers but never any fruits so I’m jealous of your bounty!
    Thanfully my neighbor’s family has a great garden and he’s very generous. Zucchini bread, zucchini bread, and more zucchini bread! I make several loaves and then freeze it. When my neighbor started giving us tons of yellow squash, I switched the zucchini to squash in the recipe. My husband and youngest son love it (thankfully!).
    I also freeze zucchini slices for future stir-frys.

  2. Raw zucchini salad!. Peel the skin off. Then use the peeler to make ribbons, go all the way around until you get to the seeds (throw out the seed cores or use for something else). Dress with chopped red onion, lemon vinaigrette, pine nuts and feta cheese. Even better the second day.

  3. I wish I had your green thumb and luck. This year we didn’t get our act together to put my new garden in so hopefully when it gets cool out we can do that and try something then. I need about a 6 ft fence to go around it so the deer can stay out. The only thing that is living so far in my deer-resistant garden is mint and oregano from 2 years ago. They eat it and it grows back.

    My favorite recipe for Zucchini is to peel the skins so they are like fries. Then put some olive oil and Parmesan cheese on top and bake in a 300 degree oven for 15 minutes so they are just a little brown. Yummy!

  4. These are the way we like to make Zucchini Bread, grilled on the bbq, sliced in half and baked with salt pepper and parm cheese, cubed up microwaved with a little water and butter and dijon mustard, battered and fried, Ratatouille and Zucchini Brownies. Yummy
