One of my favorite parts of fall is using seasonal ingredients–like pumpkin puree–in my cooking and baking. While I enjoy seeing all the fun seasonal treats for Halloween and Thanksgiving on Pinterest and in magazines, I tend to keep things simple. If it’s easy and uses ingredients we tend to have anyway, the kids and I will give it a try. These are our favorites from the past few fall seasons:
Adding pumpkin puree, cinnamon and nutmeg to a regular pancake recipe gives them a lot of extra flavor. I just love the smell!
Whole Wheat Pumpkin Muffins
My family loves the combination of pumpkin and chocolate. These little muffins are full of fiber and the perfect little lunchbox treat.
We saw these cuties in Family Fun Magazine and used Hershey Kisses, mini Nilla Wafers, and pretzel sticks (glued together with frosting) to make these adorable acorns.
Whole Wheat Cinnamon Mini Muffins
Another healthy afterschool snack or lunchbox treat, I love the smell while they’re baking. My readers commented that they replaced the oil with applesauce for even more flavor.
