It’s fall! It’s been so nice to walk out to the bus with the crisp morning temperatures, and it’s been wonderful turning the oven back on to bake muffins and snacks again. I’m sticking with my usual easy dinners–using my slow cooker or otherwise prepping early in the day as much as I can. That makes the “witching hour” of dinnertime so much easier, especially with a kid at the table doing homework and others running in and out of the house with their friends. How do you make your weeknights easier?
Here’s the plan for this week:
Sunday–Chicken, baked potatoes, and asparagus
Meatless Monday–Easy Baked Manicotti and broccoli
Tuesday–Taco Pie (from More Make it Fast, Cook it Slow)
Wednesday–Chicken & Broccoli Calzones and salad
Thursday–Lasagna Rolls and salad
Friday–Slow Cooker Tortilla Soup and cornbread muffins
Saturday–Chicken Caesar Salad and garlic bread
