It’s a new week! And this week is all about rest and self care for me. I just wrapped up a 3-year volunteer project co-chairing a big convention for my mothers of multiples club. It was wonderful! But I’m glad the stress is over, and I’ll finally take care of some things I’ve been putting off (like some dental work–ugh). I haven’t been cooking as much the past few weeks, and I need to get a spring meal plan together so we can get back on our healthy routines. Seems like a great time to share a dessert like this butterscotch pudding pie, right? Ha!
As much as I love eating healthy and making sure my whole family eats well, every once in a while we like our sweet treats. I’ve shared this No Bake Butterscotch Pie recipe over at It Is A Keeper, and you will love how easy it is.
This No Bake Butterscotch Pie recipe comes together in a few minutes, then you need to chill it for several hours. And I love the versatility–you can make it with lemon or chocolate pudding instead. You can even switch up the crust and use a chocolate Oreo one. There are so many fun combos, and all are delish!
