Homemade muffin recipes come in so handy during the school year. They’re perfect to put in lunchboxes or to serve as after school snacks.

We bake our own muffins–both mini and standard sized–often because it costs so much less than buying storebought snacks. It’s also easy to keep baking ingredients in the pantry along with these muffin baking must haves.

We take a little time on the weekend to bake up a batch of muffins, then put some aside for lunchboxes and afterschool snacks. The rest go in the freezer to use another week.

Are these healthy homemade muffin recipes?

Each of these recipes uses real foods and include fruit and fiber, so they’re healthier than what you’re seeing advertised right now for back to school season. I typically use whole wheat flour so my kids get whole grains and some fiber. If you’d prefer, you can do half whole wheat and half white flour.

How to make regular muffins into mini muffins:

For our lunchboxes, I like to use a standard mini muffin pan, since the smaller muffins fit nicely. 

As a rule of thumb, if a recipe doesn’t have directions for mini muffins, cut the time to 2/3 of the regular-sized, then check it for doneness with a toothpick.

How to make mini muffins into regular muffins:

If you have a recipe for mini muffins and you want to make regular-sized muffins, you can! Use a full-sized muffin pan and add 2/3 of the baking time so they will bake longer.

Keep an eye on the first pan of them to make sure they don’t get overbaked! You’ll also need to keep an eye on how many mini muffins the recipe makes. If it’s a low amount you’ll need to double the recipe to make sure there’s enough to make 6 or 12 full sized muffins.

Not only are these muffins easy to make, they’re also healthy and low in cost.

You’ll save money by making your own muffins and you’ll also be feeding yourself and your family healthy food instead of mystery ingredients from the back of a box.

Another benefit is that you can prep them in advance and freeze them. I just let them cool and load them into freezer bags. Freezing a batch of muffins is an easy way to get ahead of the curve when it comes to prepping your food for the week.
