It’s been a whirlwind summer, thanks to neighborhood Swim Team. Two of my three kids swam on the team, and I ran concessions. It’s all we’ve done for weeks!

Tomorrow we’re hosting a Division-wide final meet, which runs all day. Then, that evening, we have our End of the Year Party. It will be a long, hot day, and I’m excited to relax with my family after many weeks of hard work.

One of our biggest sellers at concessions is the Traveling Taco. It’s an easy way to feed a crowd! Personally, I try to stick to just one per season because of the sodium.

The rest of the year, my kids love to have Traveling Tacos when we host a birthday party or game day. It’s so easy to brown the meat and let it stay warm in the crockpot, then set up a buffet for the toppings, and let the kids serve themselves.

The “traditional” concessions stand version comes with cheese, lettuce and sour cream. We put out salsa and hot sauce for customers to add. When I make these at home, I put out more toppings–like black beans and fresh tomatoes–for more nutrition.

Traveling Tacos (Taco in a Bag)

Traveling tacos or tacos in a bag are pretty simple and once you try them you are going to wonder why you never thought of this sooner! I know I did! 

What will I need to make tacos in a bag at home? 

  • 1 pound lean ground beef
  • 1 package (1.25 oz) taco seasoning (or make your own)
  • 3 Tbsp water
  • 6 individual sized bags of Doritos or Fritos chips
  • shredded lettuce
  • shredded cheese
  • sour cream

How to make traveling tacos:

  1. Brown and drain the ground beef, then add taco seasoning and water. Heat through.
  2. Gently crush the chips in each bag, and then open each bag.
  3. Scoop the taco meat into the bag and top with favorite toppings.
  4. Add a fork to the bag and serve.

You can make this recipe gluten-free by using Fritos instead of Doritos and ensuring that the taco seasoning is GF. I make my own taco seasoning.

That's pretty cool. I thought when I read the title, maybe you were going to put the taco meat in a thermos and go traveling, which is also a pretty fun idea. Hmmm.
